Some of Byron Bay’s Best Restaurants Are Not Actually in Byron Bay

T Australia caught up with the executive chef of Raes Dining Room to get his insider tips on the best places to dine this summer.

In recent years, Byron Bay in Northern NSW has firmly established itself as a top culinary destination, making the laid-back town almost too popular for its own good. It’s hospitality scene has lured top chefs and restauranteurs from all over the country including Iceberg’s Maurice Terenzi who opened Belongil Beach Italian Food in 2021, as well as Joachim Borenius (ex-Mjolner Sydney) who, spent time in the kitchen at modern Asian diner Light Years as well as The Smoking Camel.
Among this list of Byron Bay imports is Jason Saxby, who was appointed the executive chef of Raes Dining Room, and now Sea Raes, back in 2019. Saxby formerly worked at Pilu at Freshwater in Sydney, Osteria di Russo & Russo, The Ledbury (UK), and Quay. T Australia caught up with the executive chef to ask for his insider recommendations on the venues in town worth lining up for this summer. What we discovered was some of the most sought-after gems aren’t actually “in town” after all.

“When we go out, we love to be spoiled. Outside of Byron, I’m a big fan of what Ben does at Pipit. It takes bravery and integrity to serve the food he does. It’s creative, sustainable, and delicious — all the things you need in a restaurant in this day and age of our industry.”

“I love a long lunch at Frida’s Field. It’s an amazing space overlooking the rolling hinterland hills. With extensive on-site gardens and even beef raised and processed on the property, it’s an impressive setup. Ally in the kitchen, along with the team on the floor, ensures you have a great time, and it’s the perfect spot to bring the kids to play on the massive lawn.”

For some delicious, indulgent and slightly naughty treats, Pavel and the team do an exceptional job executing classic eclairs, cakes and tarts.

“One of my favourite morning spots. Masa has mastered the croissant and taken it to new heights with some unique flavours. Straddling both savoury and sweet, you’re bound to find one to suit your cravings.”

The team at The Hut sets a high-energy atmosphere in their beautiful hinterland restaurant. They serve simple food executed perfectly, and the floor team makes sure you’re treated like family and having a great time.

Come here for modern, creative takes on Japanese cuisine that showcase local produce while respecting traditional flavours. It’s small, casual, and intimate, with a drinks menu that shines as much as the food.”

“Stepping inside Bar Heather feels like you’ve been instantly transported to the city. Dark, loud, and intimate, it doesn’t feel like a typical regional spot. The snacking options on the top half of the menu are delicious, and the extensive wine list is impressive. Chat with the team to find the best picks — it’s a long list.”

“My go-to local pub in Byron. It has a great alfresco beer garden, perfect for a beer and enjoying food that punches above its weight. Jedd and the team offer pub classics done well, killer wood-fired pizzas, and some creative dishes that give this spot its well-deserved local reputation.”

“It’s a bit out of the way and only open on weekends, but that’s what makes it special. Valentino knows how to make an incredible gelato and isn’t afraid to experiment with flavours. They’re happy to offer tastes if you’re undecided — seaweed and lemon myrtle gelato sit alongside more classic flavours, so everyone can find something they love.”
